1 ½ cups dry pancake mix

½ cup flax seed meal

1 cup skim milk

2 eggs

1 cup fresh or thawed frozen blueberries

  1. Put a non-stick skillet on medium heat.
  2. Using medium bowl, stir together pancake mix and flax seed meal. In separate bowl, whisk together milk and eggs.
  3. Spoon ¼ cup at a time onto hot skillet. Sprinkle with blueberries. Cook until bubbles appear on surface and then flip and cook until browned on the other side.

These pancakes can be frozen individually and warmed up as they are needed. This may be a convenient way to have a quick and healthy breakfast for your loved one on mornings when they don’t have somebody’s help.
