Elder Care Recipes: Healthier Creamed Spinach

This recipe takes one of the most beloved sides, creamed spinach, and gives it a healthier makeover. Instead of heavy cream and large amounts of butter, this recipe uses only one tablespoon of butter and replaces the cream with milk for a side that is still luscious without being overly indulgent.


What You Will Need

• 1 tablespoon of all-purpose flour

• 1 tablespoon of salted sweet cream butter

• 1/4 teaspoon of fresh ground nutmeg

• 1/2 cup of low fat 1% milk

• 1 clove of garlic

• 2 teaspoons of olive oil

• 1/2 Vidalia onion

• 2 bunches of steamed and chopped spinach

• 3 tablespoons of fresh grated Romano cheese

• Whisk

• Sauce pot

• Medium sauté pan

• Sharp knife

• Heat resistant spoon


What to Do

• Use the sharp knife to dice the onion into small, even pieces. Make sure that they are a consistent size so that they all cook evenly

• Remove skin from the garlic and cut off ends

• Using the blunt side of the knife with the sharp end facing away, place the blade over the clove of garlic and smash the garlic with the palm of your hand, pushing your hand away from you as you go

• Use the knife to mince the garlic into evenly-sized pieces

• Place the sauce pot over medium high heat

• Melt the butter in the sauce pot, swirling it around the bottom of the pot to melt it evenly and prevent it from browning

• Sprinkle the flour over the top and whisk to combine, allowing the mixture to cook until slightly browned and smooth

• Add in milk and nutmeg. The milk may bubble up depending on how cold it is. Be sure to whisk constantly and aggressively until this bubbling goes away and the milk is fully integrated into the flour and butter mixture, or roux

• Whisk constantly, about 1 minute, until the mixture thickens

• Heat the oil in the sauté pan over medium high heat until it shimmers slightly

• Add the garlic and onions into the sauté pan and cook for 2 minutes or until soft, stirring occasionally to prevent burning

• Add chopped spinach and cook until warmed through

• Stir the spinach into the milk mixture until thoroughly coated and cook until hot

• Plate and top with cheese
