What You’ll Need
• 1 1/3 cup Cheerios cereal, or generic equivalent, divided
• 1/2 cup oat flour. You can make your own by blending rolled oats in a blender or food processor until a fine powder. If you take this approach, make sure you measure the flour after grinding rather than before
• 1/4 teaspoon salt
• 3 tablespoons roasted cashew or natural peanut butter
• 5 tablespoons honey or agave syrup
• 1/4 cup yogurt
• 2 mixing bowls
• Whisk
• Rubber spatula
• Small baking dish
• Wax paper
• Heavy object such as a book or aluminum-wrapped brick
• Sharp knife
• Spoon
What to Do
• Put the oat flour and salt into one mixing bowl and lightly combine with the whisk
• Add one cup of cereal and combine
• In the other mixing bowl, warm the nut butter slightly just until it has a stirring consistency
• Add the honey or agave and stir with the rubber spatula until fully combined
• Pour the wet ingredients over the dry ingredients and stir with the rubber spatula until fully combined
• Line the baking dish with the parchment paper so that the piece overlaps the edges. This will make it easier to remove your bars once they are set
• Pour the mixture into the dish and press down with the spatula as much as possible to create an even layer
• Place another sheet of parchment paper over the surface and use your hands to press down as hard as you can to compress the mixture
• Use the book or brick to apply further pressure
• Top with the remaining cereal and place in the refrigerator or freezer to solidify
• Spread the yogurt over the top of the bar just before serving. If you want to bring the bar along with you, you can leave out the yogurt or top with coconut butter
